Here is a sampling of some of the recipes that you will enjoy while visiting at Annie's Garden Guest House

Baked Oatmeal

1 cup oatmeal
1 cup milk
2 eggs
1/4 cup butter
1/2 cup brown sugar
2 tsp. baking powder
1/2 teaspoon salt
1 tsp. Cinnamon,
1/2 cup raisins
1/2 cup chopped pecans (optional)

Mix together in bowl, spray casserole with Pam and pour mixture in it. It will look like soup. Refrigerate over night. Bake at 350 degrees for about 45 minutes.

Optional cooking method: Measure the Oatmeal and raisins and 1-cup water into microwave proof dish. Stir. Cook at 50 percent power for four and a half minutes. Let stand 10 minutes then mix with remaining ingredients and bake as directed. This makes the completed dish a creamier consistency.

 

English Muffin Bread or Rolls

2 packages Active Dry Yeast
6 cups white flour
1 Tablespoon sugar
2 teaspoons salt
3 1/2 cups milk
1/2-teaspoon baking soda
1/2-cup water
Cornmeal

Combine flour, yeast, sugar, salt and soda. Heat liquids to 110 to 115 degrees. Use chefs instant thermometer.
Add to dry mixture. Beat well (Use this beating process as a substitute for kneading. As this is very wet dough)
Spoon the dough into two loaf pans or 12 muffin cups that have been sprayed with quick release (Pam) and sprinkled with cornmeal.
Sprinkle the tops with cornmeal. Let rise in warm place for 45 minutes. Preheat oven to 400 degrees and bake for 25 to 30 minutes. Remove from pans to cool. Bottoms of loaves or muffins will get soggy if allowed to cool in pans.

Applesauce Oatmeal Pancakes


1 1/2 cups all purpose flour
1/2 cup whole (long cooking) oatmeal
4 Tbsp. powdered buttermilk
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 to 1-tsp. apple pie spice or mix of cinnamon, cloves, and nutmeg
2 Tbsp. sugar

Measure dry ingredients into a large bowl stir to mix before adding the following liquid ingredients.

3/4 cup applesauce
2 eggs
2 Tbsp. oil
1 to 1 1/4 cup water

Stir liquid ingredients into the dry. Stirring just until thoroughly mixed.

Drop batter by 1/3-cup measure onto a hot oiled griddle. Turn when bubbles rise to top. Serve with maple syrup.

 

Cranberry Granola


Mix together in a large bowl:
2 cups old fashioned oats (not quick cooking)
1/3 cup slivered almonds
1/3 cup coconut
1/3 cup pecan halves

In a small saucepan (if heating on stove) or Glass measuring cup (if heating in microwave) combine the following ingredients:

1/3 cup Welch's frozen Cranberry Juice Concentrate (thawed)
1/3 cup brown sugar
2 Tbsp. vegetable oil
1 1/2 tsp. cinnamon

Bring ingredients to a boil. Whisk till sugar is dissolved.
Pour syrup over dry ingredients. Stir to coat. Spread on baking sheet that has been sprayed with quick release spray (Pam).
Bake 20minutes at 350 degrees. At the end of the twenty minutes stir in the following ingredient:

1 1/2 cup dried cranberries

Bake another 10 minutes till ingredients are dry. But watch carefully it can over brown quickly.
Cool on the baking sheet. When completely cool store in tightly covered tin.

Serve with plain or vanilla non-fat yogurt.

 

Summer Fruit in Winter

2 Packages Frozen Strawberries

1 cup frozen orange juice concentrate, thawed

1 cup frozen lemonade concentrate, thawed

1 can crushed pineapple3-4 sliced fresh bananas

2 1/2 cup water

Mix together. Place in a couple of large sealed containers and freeze. Thaw partially to scoop and serve.

 

Woodburn Neighbors Hot Olives

2 C. shredded Cheddar Cheese
1/2 C. butter, softened
1 C. flour
1/2 tsp. salt
1/4 tsp. cayenne pepper

48 (or close to it) green olives, drained and allowed to dry a bit on a paper towel

Blend cheese and butter. Add flour, salt and cayenne. Mix well. Flatten small amount of mixture in hand and wrap around an olive, rolling into a ball. Bake on ungreased cookie sheet at 400 degrees for 10 to 12 minutes.

 

Dried Beef Ranch Cheese Ball (in fond memory of office Christmas parties)

1 8 oz. package Cream Cheese, softened

1 2 oz. package dried smoked beef (slices), chopped

2 tsp. dry Ranch dressing mix

1/2 tsp. ground black pepper

Mix these ingredients thoroughly. Form into 1 large cheese ball or three smaller cheese balls. Roll the formed cheese ball in grated sharp cheddar cheese (to cover the entire outside surface) Chill. Serve with crackers

 

Crisp Oat Butter Cookies

1 cup butter
1 cup sugar
1 cup firmly packed brown sugar
1 egg, 1 c. vegetable oil, 1 tsp. vanilla
3 1/2 cups flour
1 tsp. baking soda, 1/2 tsp. salt
1 cup crushed corn flakes, 1 cup rolled oats, 1/2 cup coconut
1/2 cup chopped nuts
Cream butter and sugars in a large bowl
Add Egg, beating well, then add oil and vanilla, mixing combine flour soda and salt;
add to creamed mixture. Stir in other dry ingredients.

Shape dough into 1-inch balls. Place on ungreased cookie sheet. Flatten each ball with floured fork
Bake at 325 for 13 tp 15 minutes
Cool slightly remove from cookie sheet to cooling rack.
